Onion rings... ahh the deep fried sinful delight that taste so good. The type of food that makes you feel bad but good while eating them. This baked version compares pretty well. A bit drier than fried ones, but with a dose of mustard or ketchup you'll be okay. The recipe calls for Panko bread crumbs, but having never been able to find those at my grocery store, I just used the regular kind.

I've never liked onion rings because they are too greasy and messy but these look fantastic!
