Dutch Pineapple Pie

Crust

Filling

So my Dad said "I want you to make a Pineapple Pie" and I looked at him saying "I don't think that's a thing."

A Pineapple Pie? The idea just sounded strange to me, but I guess since there is pineapple cake and it is a fruit... So after searching online, google finally gave me a recipe that seemed do-able. And it tastes pretty good as well! The crust reminds me of an oatmeal cookie with that sticky kind of filling you find in pecan pie. If you expect this pie to be pretty when you serve it, your definitely wrong. It stuck to the bottom of the pan, falls apart on the plate and generally just looks like a mess. But that seems to be what is great about it, unexpected flavors and strange looks results in a magical pie.
