Graham Cracker S'mores Cookies







Ok so my Grampa was in town (yes I know I am spelling Grampa wrong, growing up he always wanted us to spell it that way) and I want to make him a dessert, something that he would like but wasn't too fancy. And when I asked him what he like, he said "Oh, I don't eat dessert, I dont know..." and then trailed off into another sentence. I just started laughing because the fact that he said he DIDN'T eat dessert was so not true. 

This is the man that:
-the moment he got into town we would go to Lileds (amazing homemade ice cream shop)
-would eat pumpkin pie for breakfast
-would eat more Liled's for breakfast
-at any shopping trip, amusement park, etc would wonder away from the group only to magically appear again with an ice cream cone

So knowing that he probably just didn't have an answer for me on what exactly he wanted. So I had seen this recipe for S'mores cookies a while ago and thought it would be perfect because we all used to go camping together. Which ended after people moving away and the last final time it started to snow in June in Tahoe. And the tent collapsed on us, a certain same Grampa was outside our tent laughing, taking photos.

Anyways back to the recipe. It tastes like if you were making a S'more but instead of using 2 graham crackers to make the sandwich, you replaced one of them with a chocolate chip cookie. So this is a nostalgic recipe that tastes just as good as the S'mores you remember.










For the pan I used, it was just one of those standard rectangle baking sheets.

Can I say YUM? These look absolutely wonderful! I'm always tempted by smore cookies, but always put off by melting gooey marshmallows on the surface. I love how the marshmallows are folded into the batter here. I'm gonna have to give this a go!

Oh man! These look like so much fun. They make me want to go camping. Well, almost. I think perhaps I'd like to just eat them in the kitchen, from the pan.

ugh, oh man. I just made a batch and already I'm in the regretful throws of a sugar high!. I didn't have graham crackers so I used Golden Grahams cereal, but wish I didn't; some of them got too chewy. I was also generous with the salt and wow that really gave it a nice salty/sweetness to it. I also didn't put extra chocolate on top and put too many mini marshmallows :) This is definitely the 8th Sin!

Stephanie: I just used a standard sized baking sheet. As long as it has the raised edges, so the cookies don't spill over, just a large sheet is fine.

These are DELICIOUS! They taste like s'mores, but the cookie holds them together nicely. Very good. I would recommend lining your pan with parchment paper. It made them easier to pull out of the pan. Also, refrigerating them helped make cutting them much easier. Though warm out of the oven they are divine. Mmm!

What's the best way to cut these? With a Pizza cutter? Also, it looks like you put balls of dough randomly over the cookies. Is there a reason why you didn't shmush a ball of dough onto each individual graham cracker?

Broadsheet: I just used a butchers knife once it was completely cooled. And I did the balls somewhat randomly, but fairly evenly spaced instead of exactly over each one is because it doesn't really effect it. Since it's a cookie, it just spreads out into one layer anyways.

just randomly found your blog and oh my god am I glad!! Tried this recipe for some friends and it was soooo delicious. I'm from Ireland and only remember smores from being mentioned in barney as a kid so smores are very mysterious to us!! this is definitley a recipe i'm going to use again and again!!

I made these for my cousin's birthday today and they were a HUGE hit! I added a few extra marshmallows at the stage when you add in the hershey pieces and let it bake a little longer so the marshmallows started to brown. Chewy, gooey, goodness!

I am thinking about making these for a school bake sale. Do the Hershey bars really not melt after you add them, so that they still say Hershey after they are baked? I think that is a fantastic effect in your photos.

Ok first of all - I love the way these look so much. Such an adorable presentation! While I really love making delicious treats, mine are usually better judged on their flavor and not their appearance. This worked perfectly for me and looks SO PERFECT.

I wanted to share with you though, the moment of "duh" that I had while laying the graham crackers out on to my cookie sheet. Because I was at first incredibly impressed that you found the perfect sized pan to fit all the crackers on exactly. Then I realized that.. of course they're all sort of MADE that way anyway and that's totally probably done on purpose. HA.

I have a question regarding the second half of the baking time. Is it really only "5-7 minutes more" or is that supposed to be "15-17 minutes more"?

I made a cookie sheet sized pan of this recipe and the cookies were still fairly undercooked after the second 5 minutes. Ended up cooking them for 17 minutes on the second baking time and they still have some uncooked parts.

On a separate note, I topped mine with mini Reese's Peanut Butter Cups instead of broken Hershey's pieces and boy does it add a level of decadence! (Not that it needed more.) But the peanut butter does add a fun flavor.
