Coffee and Donuts Cupcakes

Cupcakes and donuts, what a sinful combination. But when its a rainy, cold day outside, might as well stay in and indulge.

Stakeout cupcakes! I'm so happy with how these came out, the tiny little donuts just make me smile. I have wanted to make donuts ever since I saw the amazing donut photos on Butterflyfoodie, which is just a great blog entirely. So I finally found a mini donut pan and this is my first time using it. it is really simple to use and the donuts came out really light and soft. I used a bit of ground up espresso powder to darken the frosting, just for looks. Oh and the cupcakes, not to be forgotten at all. They come out really moist. I thought they were under-baked at first because they felt really soft when taking them out of the pan. But when I cut one in half, it was fully cooked. So not to fret, if it feels a bit soft, that's what it is supposed to be like.

Absolutely darling! I didn't think mini-donuts could get any cuter, but clearly I just needed to see one on top of a lovely cupcake. :)

Your mini donuts came out so cute! I have the mini pan too- but i think the batter I had was too thick for the mini pan, mine came out looking like bundts...

Julie Marie said...

thanks all!!

Lindesy@Lindeselicious: hey i experienced that too at first, with them looking like bundts. what solved it for me was filling the pan less. Like i filled it up not even half way and they came out cute! Hope that helps you :)

If these aren't the cutest things I've seen, I don't know what is. Very creative idea! I've only made donuts once and without a pan. It would be a challenge not to eat more than one of these!

I just made these! They are DELICIOUS! My cupcakes came out a little dry so I poked holes in the cakes and dripped a bit of sweetened coffee into them, which helped a lot. Also, next time I make these, I'll add some brown food coloring to the icing, mine came out a bit paler than yours did. I also switched it up a bit and added red food coloring to the mini donuts icing. Overall they came out great! Thanks for the recipe!

Have you checked the donut recipe. I think you need more liquid because it's a lump in my bowl. Please let me know if I'm crazy. Thanks, Linda
