Potato Pie






Puff Pastry. A wonder all on its own. Ever since I started this blog and began making making things other than desserts, puff pastry has been a favorite for me. Simply throw some vegetables on top of it, put it in the oven and I'm happy. 

While assembling this pie, I realized something. It was starting to resemble a giant Pop Tart. And it didn't seem like it would be big enough for a dinner for four. But when I took it out of the oven, it is definitely perfect for four. It puffs up a lot and is really good. The cheese, green onions and potatoes brings a familiar flavor of maybe a baked potato but with the puff pastry and cream sauce adds a new take. I highly recommend this recipe.
It is a take on a Martha (Stewart, obviously) recipe from her new Pies and Tarts book. I adore this book, no treasure it. I look through it seeing all the amazing recipes and terrific photos just hoping one day my photos will be that good. I can't wait to make all the recipes, and believe me, I will... eventually.

This looks really good! I think the only thing I haven't put in puff pastry is potatoes! I'll have to try it. Great pics.

it is when it says pour the cream mixture into pie vents. You bake the pie, pour the cream into the vents, than bake a bit longer

This looks outstanding. I sometimes make a puff pastry filled with cheese and herbs, but I never thought to fill it with potatoes as well!

I made it tonight-it was great. My wife who is not big on potato dishes said it was great. I even added a few bacon bits to it, Didn't hurt a bit. I coulda ate the whole thing. Ron

Another way. My mom used to make a potato pie for the Jewish new year. She would brown onions and tiny bits of chicken skin in schmatz. The after the potatos were mixed and mashed, she'd stir in the crispy morsels schmaltz and all with the potatos. All of that would go into dough (she made), and rolled into a round baking dish in a tube of dough and potatos. It looked like a cinamon bun... but tasted a lot better!! We didn't have anti cholestoral drugs then...
