Coconut Cream Birthday Cake, for my Grandmother! She is a big coconut fan, I have never been so I wasn't too sure about this cake before making it. But she loves coconut, so I decided to go for it. It came out really well! The coconut is not overwhelming at all, most of the taste of it is in the filling. The coconut extract in the cake is just a hint of it. When you taste the cake by itself you can tell their is something special about the white cake, but the coconut is hard to distinguish at first. So throw all the filling, cake & frosting together and it works perfectly. Well, why would I doubt it? Its a Martha recipe.
Unless you are making this cake for a party, or have a giant appetite, I would cut the recipe in half. It makes an extremely massive cake, hence the huge piece still left in my fridge after taking it to the party and dropping some off at relatives.Recipe from Martha

Beautiful and the coconut sounds so good right now. It's hot here as well, and because it costs so much to air condition in the South we're really struggled through the summer :/ Congrats on the new camera! I can't imagine your images being any prettier, but I'm sure you'll enjoy playing with it when you get it :)

The cake was absolutely wonderful! Not only beautiful but delicious and moist too. Reminded us of Hawaii; Rich bought coconut ice cream to go along with it. Can never have too much coconut...."Mahalo Julie Marie" for this thoughtful gift! So yummy....

in 3 weeks time it is my boyfriend's birthday, will definitely make it.
So, I was wondering, since I can't find shredded sweetened coconut, can I instead use simply shredded dried coconued (that kind of that is on Rafaello)?
This cake looks very simple but because of the innocent colour I can't sop looking at it and can't stop wanting a piece of that!
